Tocosh Mantaro Reserve
The Andean penicillin. Six months in running water.
Native bitter potato fermented in a running water pit for six months, then dehydrated for premium soup.
Origin
Tocosh is to the Andes what miso is to Japan: the pantry's ferment. Studies suggest anti-Helicobacter pylori activity. Almost exclusively known in Junín and Huánuco.
