The Peruvian ceviche seaweed, cured like Japanese nori.
Red seaweed from the South Pacific (Chondracanthus chamissoi), sun-salted and dried like nori. Foldable, savory, intense.
Origin
In Huanchaco, fishermen harvest yuyo by hand, rinse it in seawater, and sun-dry it in the northern sun. It is the base of pre-Hispanic ceviche. No one offered it cured in a jar — until now.
